The Devine Pumpkin Pot

 

 

Let's make some comfort food ! The Divine Pumpkin Pot. To start with: Fry your potatoes with some smoked paprika, garlic powder and some salt. Fry them until they are nice and brown. 

Chop op your red onions in big chunks and fry them in oil.

It's ok for them to get a bit darker. Mix in your dry herbs mix and mix all together with the onions for like half a minute. Then add the chopped pumpkin. Mix for like half a minute. Next step, add the tomato paste. Again for like half a minute and add your stock.  Simmer for like 15 min . Add some more salt if needed and if you like cinnamon :) on top. Tha Creamy sauce for on top! Mix creme fraiche or greek yoghurt with mayonaise, lemon juice and some hot sauce. Serve all together. Serves 4 people / cooking time around 30 min 

 

the pot:

6 tablespoons of sunflower oil 

2 red onions

1 middel sized pumpkin, cut in cubes

70 gram tomatopaste

1,5 chicken or vegetable broth cube -  mix with 250 ml hot water

 

herb mix:

1 teaspoon garlic powder

1/2 teaspoon kurkurma

3 teaspoons of currypowder

1 teaspoon of coriander powder

1/2 teaspoon salt

 

potato cubes:

600 gram potato cubes

5 tablespoons of sunflower oil

1 teaspoon of smoked paprika powder

1 teaspoon of garlic powder

salt

 

creamy sauce:

3 tablespoons of mayonaise

3 tablespoons of greek yoghurt or creme fraiche

3 teaspoons of sambal or any hot sauce you like

juice and zest of 1/2 lemon or lime
