Purple is hot

Purple lipstick is so hot at the moment and with this beetroot pesto you can create the same effect. Which ingredients? 4 beetroots, 8 tablespoons of olive oil, 8 tablespoons roughly grated parmesan cheese or manchego cheese, 5 tablespoons roasted pine nuts, 3 tablespoons of lemon juice and half a teaspoon of grounded cumin and salt + pepper. Wrap the beetroots in aluminum foil and place the wrapped beetroots in the oven for 40 min on 200 degrees. If the beetroots are all nice and soft its ready  get blended!  Place all ingredients into a the blender except the parmesan cheese. Mix in the parmesan cheese when all is blended. Everybody has a different taste so maybe add a bit more cheese, salt or lemon juice if needed. Nice on some Japanese rice cracker with avocado.
